Colonel John Downes (1609 – c. 1666) was a commissioner who signed the death warrant of Charles I of England. After the English Restoration he was found guilty of regicide and imprisoned for life.
John Downes started the modern sourdough movement in Australia, circa 1978 at Feedwell, in Greville st Prahran (VIC). John was the original owner of Natural Tucker Bakery, Firebrand bakery and the Newrybar Bakery.
John Downes pioneered the re-introduction of traditional sourdough bread to Australia in the 1970s, and is regarded by many as ‘the father of the Australian sourdough bread movement’. He has been described by one food critic as Australia’s “high priest of sourdough”.
