It sounds as if what you want could be achieved by using separate profiles in Edge. Each profile has its own data stores, including for cookies and other site data, favourites and history.

Jan 23, 2023 · for some reasons Edge browser closed and does not automatically re-open my tabs in new sessions. All "normal" possibilities failed. I am in this folder now c:\users\username\appdata\local\microsoft\edge\user data\Default\sessions (thanks to Martmcd`s answer to another question I found this folder!!!)
