That is very easy to do in the "Units & Guides" section in Acrobat's preferences: Open up Preferences (either using Edit>Preferences in Windows, or "Acrobat>Preferences" on a Mac), then select the "Units & Guides" category: Now change the "Page & Ruler Units" setting from Inches to Centimeters as shown in the screenshot.
