  2. Method. Grease a 23 cm loose-bottomed flan tin with melted butter. Preheat oven to 200C. Rub butter into flour until it resembles breadcrumbs. Stir in egg yolk and enough water to form a ball. Turn dough out onto a floured board and knead lightly to bring dough all together. Wrap in plastic wrap and refrigerate for 20 minutes.
